Perfect Pesto Pasta Salad You’re Sure to Love

This salad is perfect for those summer days of family and friends, outdoor barbecue, and picnics. I made this for a garden party I was invited to. Who doesn’t love fresh grown herbs from the garden paired juicy grape tomatoes and fresh crisp peppers? You’d have to be anti-summer if you don’t like this Perfect Pesto Pasta Salad. I love preparing this with my Sweet & Savory Wings.

This pasta recipe is also vegan, which makes for an easy dish for those looking to avoid animal products. You could also add beans to make it a complete meal, or for the meat eaters a slice of salmon or chicken would go well with this too. Basically, this recipe is so versatile you can do pretty much anything with it once you have this base.

If you aren’t going vegan I recommend a sprinkling of parmesan cheese on the salad before serving it. Not only does it add a bit of garnish, but it’s yummy with pesto too. It does make the flavor a bit heavier, so beware of this before you do it. Make sure that’s what you really want.

I have also made this recipe warm in the winter months by adding a dash of cinnamon and popping it in the oven for a bit after I’ve prepared it. It’s equally as delicious. I hope you enjoy playing with this recipe as much as I do.

Perfect Pesto Pasta Salad
A perfectly healthy summer pasta dish you can bring to all your parties (or just enjoy it at home).

Salad
  1. Cook pasta according to directions on package. Drain, rinse, and drain again. Add pasta to a large mixing bowl, drizzle with 1 TBS olive oil and set aside.
  2. In a large pot add 4 cups water and bring to a boil. Remove from heat and add broccoli and carrots. Let stand for 1-2 minutes. Drain broccoli and carrots, rinse with cold water, and drain again. Add carrots and broccoli to the bowl with pasta.
  3. Add yellow pepper, cherry tomatoes and kalamata olives to pasta bowl. Set aside.
Pesto
  1. In a small or medium food processor add garlic while food processor is running and process until minced. Add basil, nuts, and olive oil and process until smooth scrapping down the sides of the bowl as needed. You can add lemon juice at this point if you'd like to brighten the flavor, just be careful not to add too much.
To Serve
  1. Combine pesto to pasta and vegetable bowl by folding the pesto in gently to the mixture. Transfer to a serving dish. This can be served warm or chilled. Enjoy!
