Snap Peas with Lemon Herb Dressing

This is my absolute favorite summer recipe. There’s something about snap peas and watermelon that scream summer fun. I love making this for cook outs. Not only is it super easy to make in large batches, but I haven’t found anyone who doesn’t rave about the refreshing flavor.

I made another batch of Sweet & Savory Chicken Wings over the Memorial Holiday weekend and added this salad to it. It was fantastic! This would also pair well with a simple Planked Cod or even with a good veggie burger. Any way you pair it, I’m sure you’ll find it as yummy as I do.

I dare you to get this one to the table. It’s so good that I find the bowl is gone even as I’m preparing it. It’s amazing how everyone finds the kitchen when I’m making this. I hope your family and friends enjoy this is much as mine do.

Herbed Sugar Snap Peas
Instructions
  1. Fill a large bowl with ice and water, set aside.
  2. Fill a large pot with water (enough to hold and cover the peas) and bring to boil.
  3. While waiting for the water to boil combine lemon juice, zest, olive oil, shallot, garlic, and herbs. Whisk to combine.
  4. After water boils, add peasant cook approximately 3 minutes. They should be tender but still crisp.
  5. Immediately transfer peas to ice water using a large slotted spoon to remove peas from the hot water. Let sit for 5 minutes.
  6. Drain ice water from peas and pat peas dry. Slice peas lengthwise.
  7. Toss the peas with the vinaigrette you made earlier. Serve immediately. Enjoy!
