Mango Spring Rolls

Spring rolls can seem like a daunting task to make, but with a little patience and a sense of adventure you can become a pro. The trick with spring rolls is the rice paper roll. If you soak it too long or in too hot of water the rice paper falls apart. If you don’t soak it long enough it can be too gelatinous or rubbery.

I found a recipe for a standard American diet pizza casserole and I thought, I can veganize that easy. We enjoy pizza a lot and this vegan version of pizza delivers equally as well. It’s also extremely easy to put together and can be done ahead of time and baked later.

Grapefruit Salad

This is an extremely refreshing lunch or dinner. The juicy grapefruit compliments well with the sweet and tangy cranberries and the hearty farro. I served it by itself, but it would also be great with a slice of toast with avocado, or even a light bowl of soup.

Sriracha Spread

There are several recipes for sriracha mayonnaise, but since we don’t eat eggs and dairy, and also avoid refined oils mayonnaise is not on our menu. This recipe provides the same rich flavor with the spicy kick that works so well on sandwiches.
