Cuban Black Beans

If you have an instant pot or pressure cooker you have the fastest solution to keeping cooked beans around. Being vegan we eat a lot of beans. The down fall is they take so long to cook on the stove top. When I’m in a hurry to make something I don’t want to be waiting an hour for my beans to cook.

Mango Spring Rolls

Spring rolls can seem like a daunting task to make, but with a little patience and a sense of adventure you can become a pro. The trick with spring rolls is the rice paper roll. If you soak it too long or in too hot of water the rice paper falls apart. If you don’t soak it long enough it can be too gelatinous or rubbery.

Grapefruit Salad

This is an extremely refreshing lunch or dinner. The juicy grapefruit compliments well with the sweet and tangy cranberries and the hearty farro. I served it by itself, but it would also be great with a slice of toast with avocado, or even a light bowl of soup.

Spring Green Falafel

I’m in a spring mood and I want those fresh spring flavors. Falafel is a great addition for spring because if you’re north you want something fresh flavored but still warming to cut the spring chill that’s still in the air. This Spring Green Falafel will provide you with both!

Spring Chickpea Salad

With the fresh smells of spring and the hopes of green sprouts I get excited for fresh flavors full of tender greens. This salad delivers not only in the refreshing and uplifting flavors, but is filling as well. If you have the beans already prepared, or are using canned beans, this recipe comes together in a matter of minutes.

Vegetable Fritters

Super easy to make and so scrumptious. We’ve made these for breakfast, lunch and dinner. Serve them with fruit or veggies, these fritters are your versatile meal.

Nutty Granola

This recipe was adapted from a non-vegan recipe I came across. At first I was a bit hesitant to use all the nuts and seeds, but after I followed the recommended amount the first time, I didn’t go back and readjust it because it actually does work. We use this granola on smoothie bowls and as a topping for berries. It’s definitely filling!

Lemon Coconut Rice

Lemon Coconut Rice is a decadent treat that goes well with stir fry or just about any type of vegetable. I’ve also served it under blueberries as a breakfast.
