Watermelon Jicama Salad

There’s something about watermelon and summer; it just goes together so well. My favorite is adding a bit of spice to watermelon, or really anything for that matter. The crunchiness of the jicama is a nice addition to the refreshingly sweet watermelon. This is great as a side side or stored in the refrigerator as a snack.

Roasted Broccoli

Adding roasted broccoli to a dish is an easy way to make any meal feel more gourmet with very little effort. Roasted broccoli is great added to salads, soups, pasta dishes, or even a casserole. The little bit of charring adds a nice flavor.

Kale Full Meal Salad

Having prepped veggies in the refrigerator is an easy way to have a quick snack or meal. This was made from ingredients that I had already pre-cut in my refrigerator. If you don’t have these ingredients prepped before hand, add about ten minutes to the prep time.

Best Paella

I have been trying and trying to perfect this paella recipe. You can be the judge if I’ve succeeded or not, but I think I did it. Paella is nothing to mess around with. In my mind you either make it spectacular or don’t make it at all. The flavors have to compliment each other just right in order to be considered a good paella.

Gnocchi with Lemon Sauce

This recipe is rich and creamy with a vibrancy from the lemon that brings this dish to life. This is great served as a side or add some cannelini beans to make it a filling whole meal.

Jicama Salad

This salad is so refreshing. It’s definitely great by itself, but it also is wonderful served on top of a sandwich or tacos. I originally served it on top of tacos, and of course, I make enormous amounts of everything; This means I always have left overs. The next day, I served it on top of avocado sandwiches, and for dinner that night it was the side salad. Whatever you choose to do with it, I’m sure it will be delicious!

Pico de Gallo

Cuban Black Beans

If you have an instant pot or pressure cooker you have the fastest solution to keeping cooked beans around. Being vegan we eat a lot of beans. The down fall is they take so long to cook on the stove top. When I’m in a hurry to make something I don’t want to be waiting an hour for my beans to cook.

Mango Spring Rolls

Spring rolls can seem like a daunting task to make, but with a little patience and a sense of adventure you can become a pro. The trick with spring rolls is the rice paper roll. If you soak it too long or in too hot of water the rice paper falls apart. If you don’t soak it long enough it can be too gelatinous or rubbery.
