Putting watermelon on the grill isn’t the first thing I would’ve thought of but the grill was there and I figured, why not. It’s delicious! The best thing about it is the fresh flavors paired with the caramelization from the grill. It’s a new must for us at family barbecues.

Watermelon Jicama Salad

There’s something about watermelon and summer; it just goes together so well. My favorite is adding a bit of spice to watermelon, or really anything for that matter. The crunchiness of the jicama is a nice addition to the refreshingly sweet watermelon. This is great as a side side or stored in the refrigerator as a snack.

Jicama Salad

This salad is so refreshing. It’s definitely great by itself, but it also is wonderful served on top of a sandwich or tacos. I originally served it on top of tacos, and of course, I make enormous amounts of everything; This means I always have left overs. The next day, I served it on top of avocado sandwiches, and for dinner that night it was the side salad. Whatever you choose to do with it, I’m sure it will be delicious!
