Animal Collagen vs. Plant Collagen

Collagen is one of the main proteins that makes up the human body. It has been advertised by supplement companies to be beneficial for everything from bone health to wrinkles. Most of the collagen we see on the market is from animal based sources. Let’s talk about what collagen is, why it’s necessary for healthy bodies, how you can get it, and finally, the difference between animal-based collagen supplements and vegan (made from plants) collagen builders.

Multivitamin Recommendations

While I cannot take credit for finding this multivitamin brand, my darling sister is the one who recommended them, I can say they pass my research test. It takes a lot of research to find supplements that hold up to their claims and also meet the standards of a whole food source. I can recommend these, as of today, with certainty that they are the best that I’ve found. If you have another you think is better, I’d love to hear about it. I’m always looking to improve and share the information with others!

Gnocchi with Lemon Sauce

This recipe is rich and creamy with a vibrancy from the lemon that brings this dish to life. This is great served as a side or add some cannelini beans to make it a filling whole meal.

Is Taking a Multi-Vitamin Necessary?

This is a very loaded question. There are so many supplements out there it can be mind boggling to decipher what is actually necessary for you personally. In addition to that, how do you determine quality in a market that is unregulated; even in the regulated market of supplements things aren’t drastically better. While I’d love to open this up to all supplements, for the sake of clarity let’s stick to my opinion on multi-vitamins for now. I’ll give you my opinion on if I think they’re necessary, how to determine quality, and the current debate about multi-vitamins. Hopefully, this will help you make a determination if taking a multi-vitamin is right for you and how to select one.

Buckwheat Pancakes

Who doesn’t like pancakes. They’re warming, delicious, and make you feel like being a child again… well, at least they do for me. We didn’t make buckwheat pancakes often, but buckwheat waffles were always a special treat. So, this is an easier version of an ode to my childhood.

Jicama Salad

This salad is so refreshing. It’s definitely great by itself, but it also is wonderful served on top of a sandwich or tacos. I originally served it on top of tacos, and of course, I make enormous amounts of everything; This means I always have left overs. The next day, I served it on top of avocado sandwiches, and for dinner that night it was the side salad. Whatever you choose to do with it, I’m sure it will be delicious!

What I Learned About Phytic Acid

I learned something very interesting in my research and the result led me not to avoid phytic acid, but to use it gladly whenever the opportunity arises. After sharing with you a bit more about what phytic acid is I’ll let you know what I found.

Beans Beans… BLACK BEANS!

As you’ve probably guessed we go though our fair share of beans around our house. I’m picky about where I purchase beans, though. They must be organic and I need them in large quantities. Enter Mulberry Farms! They do such a wonderful job of providing us with quality beans. I’ve been purchasing products from them for the past two years and their consistency is wonderful. I highly recommend them.

Pico de Gallo

The freshness of pico de gallo goes great on just about anything. The challenge is the ratio of ingredients. While pico is easy to make, everyone likes a bit more or less of a particular ingredient. This recipe has my favorite ratios. Let me know how you like it!

Cuban Black Beans

If you have an instant pot or pressure cooker you have the fastest solution to keeping cooked beans around. Being vegan we eat a lot of beans. The down fall is they take so long to cook on the stove top. When I’m in a hurry to make something I don’t want to be waiting an hour for my beans to cook.
