Amaranth Tabouli

Tabouli is a great summertime recipe. It’s easy to make ahead of time, stores well for an extended period of time, is easy to take on picnics, and is a refreshing addition to any meal. Most tabouli are made with couscous or quinoa, but the use of amaranth (an ancient grain) is a welcome change I think you’ll enjoy.

Instructions
  1. Cook amaranth according to the package directions. Cool.
  2. While amaranth is cooking combine all other ingredients in a medium bowl. Cover and set aside in the refrigerator.
  3. After amaranth has cooled, add it to the vegetable mixture and stir to combine. Store in the refrigerator or serve immediately. Enjoy!
