Bean Dip
A easy recipe for parties or just an afternoon snack. You can use any type of similar bean as a substitute to the cannellini beans. I use these because they are a beneficial for my genotype.

Instructions
  1. In a small skillet, heat the oil over medium heat. Stir in the garlic, thyme, and salt. Saute 1 minute.
  2. In the container of a blender or food processor, combine the beans, lemon juice, water, and garlic-oil mixture. Whirl until pureed. Add a little more water if needed to thin the dip to a better consistency. Taste and adjust seasoning.
  3. Transfer bean dip to a small saucepan and heat over medium-low heat until just warmed through. Serve warm. Garnish with chopped basil and tomatoes if you're looking to get fancy.
