Blueberry Chia Seed Pudding

This week, I’m all about the make ahead recipes. This one literally takes less than five minutes to prep, but you feel like you’re eating dessert for breakfast. If you have kids in the house this will be a definite winner. Chia seed pudding has the texture of a tapioca pudding but with an added crunch from the seeds. If you don’t like tapioca pudding because it can be too soft, chia seeds might be a great substitution.

Instructions
  1. Add all ingredients to a large mixing bowl and stir to combine.
  2. Divide into 4 serving bowls, cover and let set in the refrigerator for 4-8 hours.
  3. Serve topped with fresh blueberries and chopped nuts. Enjoy!
