Blueberry Fudge Brownies

A brownie you can eat for breakfast? Yes, please! These brownies are healthy enough to eat for breakfast, but decadent enough to serve as dessert.

Instructions
  1. Preheat oven to 350 F. Line a baking pans with parchment or if using silicone baking cups, skip this step.
  2. In a small bowl combine applesauce, almond butter, flaxseeds, and vanilla extract. Stir to combine.
  3. In a medium bowl combine flour, cocoa, baking powder, and baking soda. Stir to combine.
  4. Add applesauce mixture to the dry ingredients and stir to combine. If using stir in blueberries and/or walnuts.
  5. Spread or spoon batter into baking pan and bake until brownies are firm to the touch, about 30 minutes. This time will vary depending on the pan you're using.
  6. Remove from the oven and let cool completely. Enjoy!
Recipe Notes

*You can also use cashews, or any other mild nut in place of almonds. 

**You can make applesauce and almond butter from scratch  but if you're running short on time I use this little trick: 

In a blender or food processor add 2 apples (cored, this is approximately 1 1/2 cups of applesauce), 1/8 of almonds (this is approximately 2 TBS of almond butter), 1 TBS flaxseeds, 1 tsp of vanilla extract and 1/8 cup of water. Blend until smooth and add to the remaining ingredients above. 

*** You can make this recipe as regular sliced brownies in an 8 x 8 baking sheet, this will serve 6. I also have made this using small, bite size cupcake mold and this will serve more. Finally, I've doubled the entire recipe and make it for breakfast, and this serves 4 very hungry adults.
