Buckwheat Pancakes

Who doesn’t like pancakes. They’re warming, delicious, and make you feel like being a child again… well, at least they do for me. We didn’t make buckwheat pancakes often, but buckwheat waffles were always a special treat. So, this is an easier version of an ode to my childhood.

Instructions
  1. In a large bowl, sift together flour, baking powder, cinnamon, and sea salt.
  2. In a blender add almonds, water, apple cider vinegar, banana, and dates. Blend until smooth.
  3. Add wet ingredients to dry ingredients. Stir to combine.
  4. Heat a non-stick skillet over medium heat. Add batter half a cup at a time or to make desired pancake size. Cook until large bubbles form around the edges. Flip and cook until other side is browned.
  5. Serve immediately with fresh sliced strawberries, walnuts, and maple syrup.
