Cantaloupe Salsa

This is a delicious addition to a laid back Sunday brunch. You can also substitute pineapple for the cantaloupe and it’s just as yummy.

Cantaloupe Salsa
A refreshing salsa that pairs well with brunch or barbecue. The sweetness of the cantaloupe is offset well by the hot pepper flakes, and the diced red pepper give it a great crunch and adds another texture element.

  1. Remove seeds and rind from cantaloupe and chop into very small dice.
  2. In a large bowl combine cantaloupe, red pepper, cilantro, and scallion. Stir.
  3. Add pinch of salt and red pepper flakes. Chill until ready to serve.
