Carrot-Appleslaw

This is a great recipe to use in place of the heavy, mayonnaise laden coleslaw. It’s a wonderful side dish to add at barbecues or just an afternoon snack. It pairs wonderfully with our Cedar Plank Cod recipe.

  1. In a food processor using the large grating disc, grate the carrot and apple together. You can also grate this by hand with a cheese grater if you don't have a food processor, it just takes longer.
  2. In a medium bowl mix the lemon, oil, basil and sea salt. Add the carrot apple mixture. Mix to coat.
  3. To serve, place a small mound on plate or dish and garnish with chopped pecans. You can also roast the pecans while making the slaw if you prefer them to have a bit more crunch. Enjoy!
