Citrus Beet Salad

I’m always looking for interesting ways to make beets. The standard in our house is diced and sautéed with olive oil. As much as I love that, I’m not like my husband and can’t eat beets like that EVERY time we have beets. So, I though trying fresh beets would be a refreshing change. 

Remember when making this that beets stain. Unless you like things stained pink be sure to use caution and be cognizant of where you place juicy utensils. Grated beets are especially juicy, so use extra caution and watch for splashing!

Instructions
  1. In a large food processor shred the beets. Transfer to a large mixing bowl.
  2. Zest the orange and lime. Add zest to mixing bowl with the beets.
  3. Peel and segment the orange. Slice the orange segments crosswise making bite size pieces. Add to mixing bowl with the other ingredients.
  4. Juice the lime and add to the mixing bowl.
  5. Mince the mint and add to mixing bowl. Stir to combine.
  6. Add sea salt to taste. Sprinkle servings with crushed walnuts. Enjoy!
