Comfort Salad?!

Sometimes you need something warm and inviting. It’s been slightly colder here and a bit windier so it’s nice to have something that’s warm. A lot of the warm comfort foods I gravitate towards are heavier or more starch laden. This salad gave me the warmth and comfort while still being light and refreshing.

Spinach Salad w/ Warm Apple Dressing
Sweet and savory this recipe pairs well with either and herbed fish or poultry. You could also add a mixture of walnuts or beans and rice to it for a vegan option or a one bowl salad lunch. It is possible to use dried herbs in place of the fresh herbs by decreasing the quantity from 1 TBS fresh to 1 tsp dried.

Instructions
  1. Core and shred apples in a food processor.
  2. In a medium saucepan over medium heat combine the shredded apples and all ingredients except the spinach. Simmer until reduced by 1/3.
  3. To serve, separate spinach into four salad bowls. Ladle warm dressing over the spinach and serve immediately. Enjoy!
