Cowboy Truffles

If you like the monster cookie, everything cookie, or cowboy cookies then these truffles will be sure to please. These are no bake and come together in minutes. These keep well in the refrigerator for a quick snack or an easy dessert. They also freeze well if you like to have something on hand for impromptu guests. You could bake them in the oven, but we’ve not tried it, so that would be your own experiment. Let us know how it turns out if you do.

Instructions
  1. Combine the oats, coconut, chocolate chips, pecans and almond flour in a large bowl. Stir until combined.
  2. In a mixer or food processor add the peanut butter, agave syrup and vanilla. Mix or pulse until combined.
  3. Add dry ingredients to the mixing bowl or food processor and mix or pulse until dough comes together.
  4. Divide dough into 20 equal size potions and roll into balls with your hands. You can coat the balls in coconut flakes if you prefer.
  5. You can enjoy these right away or let rest in the refrigerator for 20 minutes before serving to get a firmer more cohesive truffle.
  6. Store in the refrigerator or freezer. Enjoy!
