Cook noodles according to package directions. Drain well & set aside.
For the dressing; In a small blender or food processor. Combine peanut butter, dates, lime juice, garlic, pepper flakes, and 1/2 cup water. Blend until smooth. See aside.
In a large skillet over medium heat, saute kale, carrots, peas, and onions. Stir occasionally until kale has wilted and and carrots are tender but still crisp. Add water as needed to keep vegetables from sticking.
In a large bowl combine the noodles, dressing, and cooked vegetables. Season with salt and pepper to taste.
To serve; divide noodles and vegetables in individual serving bowls. Top with cucumber slices, cilantro, peanuts, and a wedge of lime. Enjoy!
