Easy Tuna Salad

Tuna salad has been revamped. No more of the heavy mayonnaise laden salad smeared on bread and jammed with surgery grapes or cranberries. Oh, well, that sounds delicious too, but for every day health let’s get real.

This recipe is packed with micro and macro nutrients and just bursting with flavor. In addition to all this yumminess it the easiest recipe to make. I was having a really busy day today and the boys were hungry. BAM! Five minutes later, lunch is served.

Instructions
  1. In a small bowl, combine tuna, garbanzo beans, and cherry tomatoes. Toss to blend.
  2. In another small bowl combine basil, shallot, lemon juice, and olive oil. Whisk to blend.
  3. Add juice and olive oil mixture to the bowl with the tuna and stir to coat lightly.
  4. In a large bowl or individual serving dishes lay the arugula as a bed. Spoon the tuna mixture over. Season with salt and pepper. Voila, lunch is served.
