Gingered Beets

We love beets in our house. I spiralize, slice, dice, shred, mince, and yes, juice beets for all sorts of crazy things. They are delicious and packed with nutrients. Some people say they have an earthy flavor to them that reminds them slightly of dirt. For those who aren’t that accustomed to the flavor I recommend starting them off with this recipe because the ginger cuts the “earthy” flavor.

Instructions
  1. Preheat oven to 350℉. Layer the sliced beets in a large baking dish with a cover.
  2. Combine the minced apple, honey or maple syrup, ginger, starch, and vinegar in a blender and mix for 30 seconds. Our this sauce over the beets. Cover and bake for 30 minutes or until tender. Enjoy!
