Gnocchi with Lemon Sauce

Instructions
  1. Over high heat bring a large pot of water to boil. Add gnocchi and cook according to package directions.
  2. Reduce heat to medium and add 1 TBS of the coconut milk to the empty large pot. Add the gnocchi back to the large pot. Add the shallots and cook until translucent.
  3. Add the shallots and cook until translucent.
  4. Add garlic and saute until fragrant, about 30 seconds.
  5. Stir in the flour and cook until the flour coats the shallots.
  6. Stir in the white wine and thyme and cook until the liquid begins to simmer and reduce.
  7. Stir in the coconut milk and cook until smooth and thick.
  8. Stir in the lemon juice, lemon zest and kale. Cook approximately 30 seconds or until the kale is wilted.
  9. Remove from heat and season with salt and pepper to taste.
  10. Serve immediately with a dash of red pepper flakes (optional).
