Grapefruit Salad

This is an extremely refreshing lunch or dinner. The juicy grapefruit compliments well with the sweet and tangy cranberries and the hearty farro. I served it by itself, but it would also be great with a slice of toast with avocado, or even a light bowl of soup.

Instructions
Salad
  1. Cook the farro according to the package directions and set aside too cool. You can also prepare the farro ahead of time.
  2. Remove the supremes from the grapefruit. See the video below if you're unsure how to do this.
  3. In a large bowl, combine citrus supremes, spinach, shallot, and cranberries. Toss to combine. Add cooled farro and toss to combine.
Dressing
  1. In a small bowl combine all dressing ingredients and 1/2 cup water. Wisk to blend.
Bring it Together
  1. Add salad to 4 serving dishes. Drizzle dressing over the top of each bowl and sprinkle with walnuts. Season with salt and pepper to taste. Enjoy!
