Healthy Tofu Stir Fry
This recipe is easy to prepare on a weeknight. You can cook the tofu ahead of time and stored in the refrigerator. All that's left to do is heat and stir in your wok or frying pan. You can easily add or omit vegetables of your choosing. Stir fry is very forgiving and it's a great way to use up left over vegetables that might be hanging around your refrigerator.

Instructions
  1. Heat a large fling pan to medium high.
  2. In a small bowl toss the tofu in the liquid aminos.
  3. Heat a large wok or frying pan to medium-low or medium heat (no higher). Add olive oil and onion. Sauté for 1 minute. Add garlic and ginger. Sauté for an additional minute.
  4. Add the tofu and sauté until the tofu us browned.
  5. Add carrots and broccoli. Cover and cook for 4 minutes.
  6. Add remaining ingredients. Continue to stir and sauté until the sauce thickens.
  7. Remove from heat and serve over rice or couscous.
