Instructions
  1. In a large stockpot over medium heat add 1/2 cup of water. While water is warming, dice onion.
  2. Add onion and mushrooms to the stockpot.
  3. Mince garlic and add to stockpot.
  4. Thickly slice carrots and add to stockpot.
  5. Dice the potatoes in large chunks and add to stockpot. Give all ingredients a stir.
  6. Dice the pepper in large chunks and add it to the stockpot.
  7. Slice the tomatoes in half and add them to the stock pot.
  8. Dice the cherry pepper and add it seeds and all to the stockpot along with the peas and rice.
  9. Add the remaining water, rosemary and oregano to the stockpot. When the ingredients have come to a low simmer, reduce the heat to low. Let simmer on low for 45 minutes to 1 hour.
  10. Vegetables should tender at this point. Add the kale just before serving. Season with salt and pepper to taste.
