Kale Full Meal Salad

Having prepped veggies in the refrigerator is an easy way to have a quick snack or meal. This was made from ingredients that I had already pre-cut in my refrigerator. If you don’t have these ingredients prepped before hand, add about ten minutes to the prep time.

Instructions
  1. In a large bowl combine beets, carrots, beans, kale, onion, and quinoa. Toss to combine.
  2. In a small mixing bowl combine garlic, mustard, vinegar and 3 TBS water. Wisk to combine.
  3. Pour dressing over salad and toss to combine.
  4. Transfer to two serving bowls and sprinkle with sunflower seeds. Season with salt and pepper to taste. Enjoy!
