Pizza Casserole

I found a recipe for a standard American diet pizza casserole and I thought, I can veganize that easy. We enjoy pizza a lot and this vegan version of pizza delivers equally as well. It’s also extremely easy to put together and can be done ahead of time and baked later.

Instructions
  1. In a large pan over medium heat, cook mushroom, pepper, and onion until tender. Add water as needed to keep vegetables from sticking. Add garlic and saute for another 2 minutes or until garlic becomes aromatic.
  2. In a 9"x13" casserole dish combine cooked vegetables, tomato sauce, diced tomatoes, italian seasoning, beans, potatoes, and kale.
  3. When ready to bake. Preheat oven to 350° F. Transfer casserole dish to oven and bake uncovered 20-30 minutes or until potatoes are tender.
  4. Let stand for 10 minutes before serving. Season with salt, pepper, and a sprinkle of nutritional yeast before serving. Enjoy!
