In a large pan over medium heat, cook mushroom, pepper, and onion until tender. Add water as needed to keep vegetables from sticking. Add garlic and saute for another 2 minutes or until garlic becomes aromatic.
In a 9″x13″ casserole dish combine cooked vegetables, tomato sauce, diced tomatoes, italian seasoning, beans, potatoes, and kale.
When ready to bake. Preheat oven to 350° F. Transfer casserole dish to oven and bake uncovered 20-30 minutes or until potatoes are tender.
Let stand for 10 minutes before serving. Season with salt, pepper, and a sprinkle of nutritional yeast before serving. Enjoy!
