Roasted Quinoa Salad

This meal is so wonderful. Not only is it filling, but it’s fresh while still being full of warming spring flavors. I like to make it when I’m running behind on making a meal because it requires little effort for great flavor.

Instructions
  1. Preheat oven to BROIL. Prepare a baking sheet with parchment paper. Spread broccoli florets, red onion slices, summer squash, and lemon haves (cut side up) on baking sheet.
  2. Place vegetables 4-5 inches under broiler watching constantly so they don't burn. Vegetables are done with the edges are just turning crisp, approximately 5 minutes. Remove from broiler and let cool.
  3. In a large salad bowl toss to combine the quinoa, roasted veggies, except the lemons, and spinach.
  4. In a small bowl add the vinegar, maple syrup, mustard and juice from 2 of the roasted lemons. Wish to combine.
  5. Pur dressing over salad and toss to combine.
  6. Season with salt and pepper to taste. Serve with a wedge of roasted lemon and a sprinkling of roasted pumpkin seeds.
