Savory Cabbage Carrot Salad

I had a dinner party last week. My goal was to test some recipes for you all. The entire meal was based on savory flavors like ginger, garlic and fresh herbs. I wanted to add a salad to the second course, Pan Seared Cod. The recipe needed something cool and refreshing to go along with the cod. I also wanted to use the sauce from the salad to flavor the cod, which can be bland and tasteless when not prepared properly.

How I Prepared It

The cod was simple and cooked to perfection. I pan boiled it lightly with only salt, pepper (papaya seeds) and chives. The star is the salad with beautiful purple and orange color mixed with the bright green from the herbs. The balance of flavors comes from the dressing, which is an olive oil and lemon juice base that helps brighten the flavors of the cabbage and carrots.

Well, this recipe is a hit with everyone. I made a huge batch so we would have leftovers for lunch during the week. The flavors would be ideal for any protein source like fish, chicken, or steak. You could also make an entire vegan meal by adding some garbanzo beans and faro to the salad and tossing it with the dressing. Lunch on the go, mastered!

You can make this recipe easier if you have a food processor. I used the slice glad for the cabbage and the shred glad for the carrots. I then used the blender to mix the remaining “dressing” ingredients. It took me approximately 5 minutes to make this using the food processor. So, if your pressed for time, it’s worth pulling it out.

  1. In a large mixing bowl, combine cabbage, carrots, cilantro, dill, and chives. Toss until fully combined. Set aside or store in refrigerator until ready to serve.
  2. In a small bowl combine remaining ingredients and whisk to combine. Set aside until ready to serve.
  3. When ready to serve, place a large potion of cabbage carrot mixture on plate and drizzle 1-2 TBS of dressing over the top. You can also combine salad and dressing just before your ready to eat. Serve in a salad bowl for a family style meal. Enjoy!
