Savory Salmon, Greens, and Quinoa Dinner

Dinner during the week is hectic in our house. We all are running around trying to complete the tasks of the day and it’s difficult to take the time to prepare an actual meal. I’m trying to get better at making a dinner that we can sit down together and catch up with, but I also don’t have a lot of time to prep a meal because I tend to have session directly up to and right after dinner time.

This is an easy alternative to a smoothie dinner that takes mere minutes to prepare and I can serve it up quickly. It’s an easy clean up for the boys too 😉

Instructions
Quinoa
  1. In a fine strainer rinse quinoa thoroughly.
  2. In a medium pan combine quinoa, sea salt, and water. Bring to boil over high heat. Reduce temp to a low simmer for 10 minutes.
  3. Remove from heat and let sit for 5 minutes.
  4. Add lemon juice and fluff before serving.
Salmon
  1. Preheat oven to 350 degrees F. In a small baking pan with lid add salmon skin side down. Sprinkle with sea salt.
  2. Bake for 10-15 minutes or until salmon begins to flake.
Greens
  1. In a medium saucepan over medium heat add olive oil, garlic, and tomatoes. Saute until tomatoes begin to soften, about 3 minutes.
  2. Add greens and saute until wilted. Just before serving toss in lemon juice.
To Serve
  1. On a large plate spoon 1/4 of the quinoa. Place 1/4 of the salmon on one side of the quinoa. Spoon greens mixture on top of the salmon and garnish with a lemon slice.
