Spicy Potato Tofu Bowls

This is a mildly spicy and filling breakfast. I like prepping the ingredients the night before to make for an easy morning. It’s a great recipe for a crowd too! Just multiply the ingredients for the number of people you’re serving and each person can dress their own with the toppings they like.

Instructions
  1. In a large skillet over medium heat add potatoes, pepper, onion, and garlic. Add enough water to keep vegetables from sticking. Cook until potatoes are tender, approximately 20 minutes, stirring occasionally and adding water as needed to keep vegetables from sticking.
  2. Add tofu, spices, lime juice, and salt and pepper. Stir to combine and cook until heated through.
  3. Serve in bowls and garnish with tomatoes, cilantro, and a wedge of lime. Enjoy!
