Thai Tofu Lettuce Wraps

These tofu wraps are so easy to make and are always a hit with guests. I’ve used endive to serve them in as small appetizers instead of lettuce and they make the cutest and most delicious appetizer boats.

Instructions
  1. In a small bowl, combine the first 4 ingredients, stir well.
  2. Heat the sesame oil in a large skillet over medium-low heat. Add the tofu; cook 5 minutes or until browned, stirring to crumble. Add onions and sauté 3 minutes. Add lime juice mixture, cilantro, and mint; sauté 2 minutes. Remove from heat and stir in peanuts.
  3. Spoon 1/4 cup of tofu mixture into each lettuce leaf and roll up. Serve immediately.
