The Easiest Avocado Brownies

I made a double batch of these on a Sunday night to keep in the refrigerator for a sweet treat during the week. Sometime’s the boys get a craving for something sweet and yummy at the end of the day and so I like to keep something on hand. They often don’t prefer that I take the dried dates out for them because it doesn’t seem special enough.

I served them as a dessert for a surprise dinner guest we had over on Monday. I randomly topped them with a blueberry compote I had left over from pancake day (which is normally every Saturday in our house). It was fantastic. I really think they’d be delicious with a strawberry compote, but the blueberry was actually quite delicious.

Instructions
  1. Preheat the oven to 350°F and lightly grease an 8 x 8″ baking dish.
  2. In a food processor, combine the avocado, banana, water, and agave nectar. Blend until smooth.
  3. In a large bowl, combine the flour, cocoa powder, and baking soda. Stir to combine. Pour the wet ingredients from into the bowl with the dry.
  4. Sprinkle a few chocolate chips on top then bake in the oven for 20 minutes and check to see if they spring back. If not, bake for 10 minutes more, or until set.
  5. You should be able to stick a fork in the center and have it come out clean.
  6. Allow to cool for at least 15 minutes before serving.
