Vanilla Almond Milk

This is a great substitute for skim milk for those who are lactose intolerant or those looking to avoid dairy. You can easily substitute other genotype approved nuts if almonds are to be avoided.

Instructions
  1. In a small bowl soak almonds in 1 cup of water 6 hours or overnight.
  2. After soaking add almonds with water to a blender. Blend until smooth.
  3. Add the remaining 4 cups water, vanilla, salt and sweetener if using.
  4. Strain in the cheesecloth for a smooth milk. (Don't throw out the pulp if you are straining it. Use this in salads, sauces, or smoothies.)
  5. Transfer to a large covered pitcher with lid. A Mason jar works great for this. Will keep in the refrigerator for 7 days.
